For a while now my family and I have been cooking and eating Vegan food at home (I still do enjoy some chicken and cheese while eating out :) ). It is really hard to find good, yummy desserts that aren't plain weird (like black bean brownies, ick!). I watch cupcakes wars a lot and on there was a chef named Chloe, she was a vegan cupcake baker and she went on to win the show. Now she has a website (www.chefchloe.com) and is about to come out with a recipe book.

Here are here wonderful, fluffy, yummy, yet vegan coconut cupcakes.
First I grind 4 and 1/4 cups of whole wheat. It calls for white and only 1 and 3/4 cups of it, but I ground extra just so I can have it for next time. And you don't have to grind wheat, but it just adds an extra bit of healthiness to the cupcakes.

I add the flour and than a cup of sugar. 

I'm such a messy chef.

Than 1 tsp of baking soda

1 tsp of salt

I than mixed all of the dry ingredients together and prepared my wet ones.

I add one cup of coconut milk which you can get at Whole Foods or Harris Teeter

To that I added 1/2 cup of olive oil. The recipe called for canola oil and 1 cup of it, but I prefer to use olive oil and not too much of it.

After I added 1 Tsp of Apple Cider Vinegar

Lastly, I added 2 tsp of Vanilla extract.

Once you add everything together, its not the prettiest thing on the planet...

I whisked everything up to make it a single color (to my relief) and got ready to add it into the dry mix,

From cupcake wars I learned the way to put cupcakes in the pan, you use a cookie scoop!


When I put these into the oven I started singing "They're off to see the Wizard! The wonderful Wizard of Oz!" I'm such an awkward person. 

350 degrees for 15 minutes

I made a mistake by taking the cupcakes out too early, and they sunk in the middle because they were not fully cooked so I would say to cook them for 18 minutes.

This is the final product! I actually made the cupcakes for and Anatomy project and the icing is made to make the cupcake look like the inside of bone. My mom made the icing with earth balance which is vegan butter, some coconut milk, and some confectioner's sugar. All in all these cupcakes are very delicious and don't let the fact that they are vegan make you think they aren't. :) Here is the recipe without pictures. Enjoy!

Cocunut Cupcakes

  • 1 ¾ cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup coconut milk
  • ½ cup canola oil
  • 2 tablespoons vanilla extract
  • 1 tablespoon white or apple cider vinegar
